Description

Höfflin Waldbrettspiel Weißer Burgunder 2021 is a dry Pinot Blanc from Baden's Kaiserstuhl with smoke, cream and wet gravel from loess and limestone soils. This is a Pinot Blanc with real grip. Oak brings vanilla and a roasted edge. The Kaiserstuhl fruit stays broad and ripe, with a cool oyster-shell note under the cream.

About the Wine
The fruit for Höfflin Waldbrettspiel Weißer Burgunder 2021 comes from the Kaiserstuhl in Baden, where Pinot Blanc is known locally as Weißer Burgunder. This bottle carries the dry, full-bodied side of the grape, with 13.5% alcohol and a broad feel in the mouth. The listed soils are loess and limestone, and the wine shows that mix in a very direct way. There is softness around the yellow fruit. There is also a wet gravel note that runs through the finish. The name Waldbrettspiel points to a woodland butterfly, which fits the estate’s close attention to the small life around its vineyards. In the cellar, this Pinot Blanc was aged in oak barrels. The barrel imprint is easy to spot, with vanilla, cream and a light roasted smoke rather than a neutral stainless-steel profile. The oak does not cover the Kaiserstuhl mineral side. It frames it with a rounded texture and a savoury edge. The wine has a faint maritime scent, almost like oyster shell, which makes the creamy palate feel more layered. A kefir-like acidity cuts through the breadth and leaves a tangy mark after the last sip.

Tasting Notes
The nose opens with roasted hazelnut skin, light smoke and vanilla cream, then moves into oyster shell and wet gravel. The palate is broad for Pinot Blanc, with ripe yellow apple, cream and a faint lactic tang that recalls kefir rather than simple citrus. Oak gives the Höfflin Waldbrettspiel Weißer Burgunder 2021 a polished, smoky frame, and the Kaiserstuhl stone note keeps the finish savoury. It ends with volcanic rock, salted butter and a clean mineral pull that stays longer than the first creamy impression suggests. Drink 2024-2029.

Food Pairing
Pour this with seared scallops, grilled prawns or a piece of cod finished with brown butter and lemon. The wine has enough cream and vanilla from oak to meet richer seafood, and its wet-gravel finish keeps each bite clean. For a regional Baden idea, try it with Forelle Müllerin, pan-fried trout with parsley potatoes and a squeeze of lemon. Roast chicken with tarragon, guinea fowl in a light cream sauce or soft cheeses like Brie de Meaux also suit the smoky, lactic side of this Pinot Blanc. It is especially good when the dish has butter, herbs and a little salt.

Producer
Höfflin is based in the Kaiserstuhl in Baden, close to Bötzingen, and the estate has a strong habit of linking its wines to the living landscape around the vines. Waldbrettspiel is the German name for the speckled wood butterfly, and that single word gives this bottle a more personal identity than a standard varietal label. The producer’s wines often feel tactile, with fruit, soil and cellar texture presented as physical sensations in the glass. In this 2021 Weißer Burgunder, that approach shows through the meeting of loess softness, limestone-like gravel and oak barrel cream. Höfflin’s style in this bottle is open and sensory, with smoke, vanilla and a savoury mineral line all clearly marked. The estate’s Kaiserstuhl setting matters here, since the wine has the ripeness of Baden and a darker stony note that feels linked to these warm volcanic hills.
