The Grüner Adelfränkisch vines—an historically significant but extremely rare variety—are carefully tended, with selective hand-harvesting to ensure only optimally ripe, healthy bunches are brought to the cellar. Fermentation is typically carried out in temperature-controlled stainless steel to protect the delicate floral and citrus aromatics, followed by a period of maturation on fine lees to enhance texture and complexity while retaining freshness and clarity of fruit.
