Tasting Notes
In the glass, Highland Park 16 Years shows a natural, warm amber hue, the colour coming purely from its time in oak rather than added caramel. The nose is inviting and nuanced, with waves of vanilla, floral tones and ripe orchard and stone fruits interwoven with honeyed sweetness, fragrant spice and a distinct, characterful oak influence from the Swedish wood. Subtle notes of dried fruits, orange peel and a gentle maritime breeze glide underneath, hinting at its Orkney origins. On the palate, this whisky is rounded, full-bodied and textural, with layers that unfold gradually. Rich honey and malted barley form the core, supported by flavours of dried apricot, sultana and baked apple, followed by roasted oak, toasted nuts and a thread of warming baking spices. A soft peat smoke – never harsh or dominant – adds depth and structure rather than intensity, allowing the fruit and oak tones to shine. The finish is long, silky and warming, with lingering spice, malty sweetness and a delicate coastal minerality. With its 16 years of age and robust cask influence, this whisky is drinking beautifully now but will continue to evolve gracefully in an unopened bottle for many years.

Production
Crafted on the remote Orkney Islands, Highland Park 16 Years draws its character from a cool maritime climate, brisk North Sea winds and peaty heather-covered landscapes that shape both the malt and maturation environment. The barley is traditionally malted, including a portion peated with local Orkney peat rich in heather, imparting a gentle, aromatic smoke. After careful distillation in Highland Park’s copper pot stills, the spirit is laid to rest in a carefully curated mix of virgin Swedish oak, ex-bourbon barrels and sherry-seasoned European and American oak casks. This unusual cask regimen – particularly the use of Swedish oak introduced through the collaboration with Björn Frantzén – brings an extra dimension of spice, structure and wood character not seen before in the core range. The whisky is bottled at 48% ABV, non-chill filtered and with natural colour to preserve its full texture, aroma and flavour complexity.

Food & Serving
Highland Park 16 Years “Between You and I” is ideal for contemplative sipping on its own, but also shines alongside thoughtfully prepared dishes. Try it with roasted duck, grilled lamb, venison or dishes that echo Frantzén’s Nordic–Japanese–French sensibility: soy-glazed pork, umami-rich mushroom dishes, or turbot with brown butter and sea herbs. Hard cheeses (such as aged Gouda or Comté), smoked almonds and dark chocolate with sea salt also make excellent companions. Serve neat at 16–20°C (60–68°F) in a quality whisky glass; a few drops of water can gently open up the layers of fruit and spice. Decanting is not necessary, but allowing the whisky to sit in the glass for several minutes before tasting will reveal more complexity and nuance.
