Drawn from declassified barrels and blending multiple vintages, it channels the same old-school craftsmanship that made Bonneau a legend in Châteauneuf-du-Pape. This is a bottle for true Rhône enthusiasts: rustic, characterful, and deeply evocative of a bygone era of winemaking.

Tasting Notes
In the glass, Les Rouliers typically shows a deep, slightly hazy ruby to garnet hue, reflecting its minimal intervention and traditional élevage. The nose is expressive and wild in the best way: sun‑warmed red and black berries, dried cherry, garrigue herbs, leather, and a hint of game and spice, often joined by touches of dried flowers and earthy underbrush as it opens. On the palate, expect a medium to full-bodied wine with supple, old-vine concentration and a beautifully savory profile. Red plum, cherry, and raspberry are layered with notes of dried thyme, pepper, tobacco, and a gentle oxidative warmth that adds complexity rather than weight. The tannins are fine but present, with a natural grip that keeps the wine lively, while the acidity is surprisingly fresh for such a traditional Rhône red. While designed to be enjoyed within a few years of release, Lot 2021 has the structure and concentration to develop nicely over 5–8 years, gaining in tertiary nuance and textural harmony.

Production
Les Rouliers is typically Grenache-led, sourced from parcels in and around Châteauneuf-du-Pape and the broader Southern Rhône, grown on classic terroirs of galets roulés (rounded stones), sand, and clay-limestone. Vines are often older and low-yielding, giving naturally concentrated fruit. Harvesting is traditionally done by hand, with a strict selection of bunches in the vineyard and cellar. Fermentation follows the old Bonneau style: indigenous yeasts, long macerations, and a minimalist approach with very little intervention. The wine is then aged for an extended period in ancient, neutral foudres and old barrels, allowing slow oxidation and integration before selected barrels are blended and bottled as Les Rouliers, often without heavy filtration.

Food & Serving
This is a versatile Rhône red that shines alongside rustic, flavor-packed dishes: slow-cooked lamb shoulder, Provençal beef daube, grilled sausages, duck confit, or mushroom dishes with thyme and garlic. It also pairs beautifully with aged hard cheeses and charcuterie. Serve at around 16–18°C (60–64°F) to highlight its aromatic complexity and maintain freshness. A gentle decant of 30–60 minutes helps the wine shed any initial reduction and allows the bouquet to fully unfurl, especially in the first few years after release.

Henri Bonneau was one of the most revered traditional producers in Châteauneuf-du-Pape, known for his tiny cellar, long élevage, and deeply personal, artisanal approach to winemaking.
