Tasting Notes
In the glass, this Sauvignon Blanc shows a pale, luminous color that hints at its freshness. The nose is immediately expressive, with gooseberry, passion fruit and grapefruit at the forefront, followed by gentle layers of asparagus and tomato leaf that add a classic herbal lift. The palate is tight and refreshing, driven by zesty lime, lively acidity and a crisp, focused finish. It’s a wine made for immediate enjoyment, though the firm structure and clean fruit may allow it to hold nicely over the short term.

Production
Hartenberg farms with a regenerative approach, using controlled grazing with cows, producing its own compost and deliberately avoiding copper in order to protect and build healthy soils. Since the early 2000s, the estate has worked without pesticides, instead using native insect populations to help manage pests and maintain vineyard balance. The vineyard team has also protected the health of its younger plantings, keeping all vineyards planted within the last twenty years virus-free.

Food & Serving
This is a versatile Sauvignon Blanc for fresh seafood, oysters, grilled fish, asparagus, goat cheese and summer salads with citrus or herbs. Serve well chilled at around 8–10°C to highlight its brightness and aromatic intensity. Decanting is not necessary; simply open and enjoy while the wine is fresh and lively.
