Made exclusively from Pinot Noir and sourced from prized Grand Cru vineyards in the heart of Champagne, this cuvée balances intensity with a bone-dry, mineral backbone. The “Les Chemins de Traverse” name hints at a more artisanal, exploratory approach, showcasing a distinctive expression of Pinot Noir from one of France’s most celebrated sparkling wine regions.

Tasting Notes
In the glass, this Extra Brut Champagne shows a luminous, pale gold hue with fine, persistent bubbles that form a delicate mousse. On the nose, it offers an elegant mix of red-fruited Pinot Noir character—wild strawberry, raspberry and redcurrant—layered with notes of citrus zest, white flowers, crushed chalk and subtle brioche from time on lees. The palate is tightly knit and focused, with a vibrant, chalky minerality that reflects its Grand Cru origins. Dry and precise, the Extra Brut dosage lets the structure and purity of the fruit take center stage: red apple skin, blood orange and small red berries are framed by hints of toasted hazelnut and fresh pastry. The finish is long, saline and energetic, suggesting excellent aging potential for several more years in bottle, during which the wine will gain additional complexity and savory, autolytic notes.

Production
Sourced from Grand Cru vineyards in the Champagne region of France, this cuvée is rooted in classic chalk and limestone soils that lend tension, finesse and minerality. Grapes are typically harvested by hand to ensure optimal selection of bunches and to preserve the integrity of the delicate Pinot Noir berries. In the cellar, the must is gently pressed and vinified in temperature-controlled vessels to safeguard aromatic purity, followed by a secondary fermentation in bottle according to the traditional méthode champenoise. Extended aging on lees builds texture and complexity, while the Extra Brut dosage is kept very low to allow the terroir and the natural character of Pinot Noir to shine through with clarity and precision.

Food & Serving
This Grand Cru Extra Brut is superb at the table, pairing beautifully with refined dishes such as oysters, scallop crudo, tuna tartare and sashimi, as well as poached lobster, crab and delicately prepared white fish. Its structure and Pinot Noir depth also make it a fine companion to charcuterie, soft-ripened cheeses like Brie or Chaource, and simple roast chicken with herbs. Serve well-chilled, ideally around 8–10°C (46–50°F). A brief, gentle opening in the glass is usually sufficient; decanting is generally not necessary, though pouring into larger-bowled white wine glasses can help reveal additional aromatic nuance.
