Description
Haderburg Metodo Classico Rosé Extra Brut is a finely crafted sparkling rosé from the cool, alpine vineyards of Trentino Alto Adige in Northern Italy. Made predominantly from Pinot Nero with a touch of Chardonnay, it offers a dry, elegant style that showcases purity of fruit and a beautifully refined mousse. As a traditional-method (Metodo Classico) sparkling wine, it brings Champagne-like precision with a distinctly Italian mountain character.
Tasting Notes
In the glass, this wine shows a delicate onion-skin to pale salmon hue, with a fine, persistent perlage that speaks to careful bottle fermentation. The nose is fresh and focused, offering aromas of wild strawberries, pomegranate, red currant, pink grapefruit and blood orange, layered with notes of rose petals, brioche, and a subtle mineral edge.
On the palate, Haderburg Metodo Classico Rosé Extra Brut is dry, crisp, and linear, with a vibrant spine of acidity and a very clean, almost saline finish. Red berry fruit and citrus zest are balanced by hints of pastry and toasted nuts from lees aging, while the Pinot Nero lends structure and gentle grip. The Extra Brut dosage keeps the wine taut and refreshing, making it especially food-friendly. As a non-vintage sparkling, it is ready to drink on release but can comfortably rest for a few more years, gaining a touch of mellow complexity while retaining its freshness.
Production
The grapes for Haderburg Metodo Classico Rosé Extra Brut come from hillside vineyards in Trentino Alto Adige, where cool alpine nights and plentiful sunshine preserve acidity and aromatics. The soils are typically a mix of limestone, gravel, and porphyry, contributing tension, minerality, and finesse to the wine. Grapes are harvested by hand to ensure selection of only the healthiest bunches, with Pinot Nero providing color, structure, and red-fruit character, and Chardonnay adding elegance and lift. After a gentle pressing and primary fermentation, the base wines are blended and bottled for secondary fermentation according to the Metodo Classico, with an extended period resting on the lees to build creamy texture, fine bubbles, and subtle bakery notes before disgorgement with a low Extra Brut dosage.
Food & Serving
This Extra Brut rosé is an excellent partner for refined aperitifs and a wide range of dishes. It pairs beautifully with crudo, oysters, shellfish, sushi, and delicate fish dishes, but also stands up well to charcuterie, prosciutto, light poultry, and soft to semi-hard cheeses. It’s also a smart choice for vegetable-based cuisine, such as beetroot salads, grilled asparagus, or mushroom tarts. Serve well-chilled, ideally around 6–8°C (43–46°F). Decanting is not necessary; simply open the bottle a few minutes before serving to let the aromas unfurl in the glass.
