Tasting Notes
In the glass, it typically shows a bright, pale straw color with a persistent, delicate mousse. The nose is crisp and layered, opening with notes of green apple, citrus zest, white flowers, and subtle brioche, while the palate is dry, focused, and mineral-driven with lively acidity and a clean, saline finish. The pas dosé style emphasizes freshness and precision rather than sweetness, allowing the mountain-grown fruit and method classique character to shine through. It has the structure and balance to develop gracefully in bottle over the next few years, gaining extra complexity and depth with time.

Production
Produced in Trentino-Alto Adige, this cuvée draws on the region’s cool alpine climate and well-exposed vineyard sites, which help preserve acidity and aromatic clarity. Chardonnay and Pinot Noir are traditionally harvested by hand, then vinified using the traditional method, with the second fermentation taking place in bottle and no dosage added at disgorgement to preserve a completely dry profile.

Food & Serving
This sparkling wine is excellent as an aperitif, but it also pairs beautifully with oysters, sashimi, shellfish, light seafood dishes, and delicate risottos. Serve well chilled, ideally around 6–8°C, and consider a short decant only if you want to soften its initial intensity; in most cases, opening and pouring straight from the bottle is best.
