Haderburg Metodo Classico Brut is an elegant Italian sparkling wine from the cool, alpine slopes of Trentino-Alto Adige. Crafted from Chardonnay and Pinot Nero, it combines finesse, freshness, and depth in a style that nods clearly to Champagne while retaining a distinctly northern Italian character. This non-vintage Brut has become a reference point for high-quality metodo classico bubbles from the region, prized for both its precision and drinkability.

Tasting Notes
In the glass, Haderburg Brut shows a pale straw-yellow colour with brilliant highlights and a very fine, continuous perlage that forms a persistent crown of bubbles. The nose is refined yet expressive, with notes of ripe citrus, tropical fruit, and white peach intertwined with delicate floral tones and a light hint of brioche and fresh pastry from time spent on the lees. On the palate, the wine is harmonious and lively, with a vibrant, well-integrated acidity that keeps it incredibly refreshing. Flavours of lemon zest, green apple, and subtle tropical fruit are layered over a mineral backbone, leading to a clean, dry, and persistent finish. The texture is creamy but never heavy, making it both versatile at the table and easy to enjoy on its own. While designed to be enjoyed now for its freshness and energy, good bottles can comfortably develop a bit more complexity over 3–5 years of careful cellaring.

Production
Haderburg Metodo Classico Brut is sourced from vineyards in Trentino-Alto Adige, where high altitudes, cool nights, and mineral-rich, well-drained soils help Chardonnay and Pinot Nero ripen slowly while preserving acidity and aromatic intensity. Grapes are typically harvested by hand to ensure careful selection of healthy, perfectly ripe bunches. After a gentle pressing, the base wines are fermented in temperature-controlled conditions, then blended and bottled for the second fermentation according to the traditional metodo classico. The wine rests on its lees for an extended period, allowing the fine perlage to develop and subtle autolytic notes to emerge, before disgorgement and dosage to achieve a balanced Brut style.

Food & Serving
This Brut is a natural choice as an aperitif, but its structure and freshness make it an excellent partner at the table as well. Try it with oysters, shrimp cocktail, sushi, or crudo, as well as delicate fish dishes, light risottos, vegetable tempura, or fresh cheeses. It also pairs beautifully with antipasti and charcuterie, cutting through richness with ease. Serve well-chilled at around 6–8°C (43–46°F); a brief 10–15 minutes in the glass is enough for the aromas to fully open up, and decanting is not necessary for this style of sparkling wine.
