Tasting Notes
In the glass, Crush Nat Johanniter shows a slightly hazy, pale lemon to straw hue, a visual cue to its unfiltered, low‑intervention style. The nose is aromatic and inviting, with notes of citrus zest, green apple and pear, joined by hints of white flowers, fresh herbs and a subtle stony, chalky undertone from the calcareous soils.
On the palate, the wine is dry, lively and crisp, with bright acidity carrying flavours of lemon, lime, crunchy orchard fruit and a gentle grapey, floral nuance typical of Johanniter. The unfiltered nature gives a soft, lightly creamy texture and a sense of depth, while the finish is clean, saline and refreshing. Best enjoyed in its youthful years for maximum vibrancy, it will comfortably develop for a further 2–3 years, gaining a bit more roundness and complexity while retaining its freshness.
Production
The grapes for this wine come from Gustavshof’s biodynamically farmed vineyards in Rheinhessen, about 30 kilometres south of Mainz, where limestone‑rich soils and a temperate climate help Johanniter ripen with both flavour and acidity. The estate works according to Demeter guidelines, with a strong focus on soil life, biodiversity and closed‑loop farming practices, including self-produced compost and diverse plantings between the rows. Harvest is carried out with careful selection to bring in healthy, flavourful fruit. In the cellar, the wine is vinified with a decidedly natural approach: gentle pressing, spontaneous fermentation with indigenous yeasts and minimal intervention throughout. It is bottled unfiltered, preserving its natural texture, aromatic complexity and a vivid sense of place.
Food & Serving
This Johanniter is a versatile food wine, pairing beautifully with light, seasonal dishes such as grilled or baked white fish, seafood salads, sushi, fresh goat’s cheese, vegetable tarts, asparagus, and simple poultry dishes with herbs. It also works well with mildly spiced Asian cuisine where citrus and freshness are key. Serve chilled at around 8–10°C to highlight its aromatics and crisp structure. Decanting is generally not necessary, though opening the bottle 10–15 minutes before serving allows the aromas to unfold; if there is a light natural sediment, simply pour gently or embrace it as part of the wine’s character.
