Tasting Notes
In the glass, this Taurasi Riserva shows a deep, opaque ruby core with garnet reflections at the rim, hinting at both concentration and early evolution. The nose is complex and layered, with dark cherries, black plum and wild berries intertwined with notes of dried rose, leather, licorice, tobacco leaf, and a distinct mineral, ash-like edge that speaks of its volcanic origins. Subtle tones of sweet spices, cocoa, and cedar emerge with air, adding further nuance.
On the palate, the wine is full-bodied and firmly structured, with the hallmark Aglianico tannins that are ripe, grippy, and finely woven. Flavors of sour cherry, blackcurrant, and macerated berries are supported by savory hints of smoked tea, balsamic herbs, and earthy truffle. A vibrant, persistent acidity keeps the wine lifted and fresh, while the long, mineral-driven finish lingers with notes of dark fruit, spice, and iron-inflected salinity. Still youthful and vigorous, the 2016 Primum Riserva has excellent aging potential; it can easily evolve and gain complexity over 10–20 years from vintage when well cellared.
Production
Sourced from estate vineyards in the Taurasi area of Campania, Guastaferro’s Primum typically comes from old, low-yielding Aglianico vines rooted in volcanic, clay-limestone soils at altitude. This terroir provides excellent diurnal temperature swings, allowing for slow, even ripening and the development of intense aromatics, dense fruit, and naturally high acidity. Grapes are usually harvested by hand with careful selection in the vineyard to ensure only perfectly ripe, healthy bunches are brought to the cellar. Vinification is traditionally minded, with extended maceration on the skins to extract color, tannin, and complexity, followed by a long élevage in large oak casks or barrels to gently polish the structure without overwhelming the fruit. As a Riserva, the wine spends additional time aging in wood and bottle before release, ensuring greater harmony and integration upon arrival in the market.
Food & Serving
This Taurasi Riserva calls for richly flavored dishes that can stand up to its structure and intensity. It pairs beautifully with slow-braised meats such as ossobuco, lamb shanks, wild boar ragù, and beef short ribs, as well as roasted game, aged pecorino, and other mature hard cheeses. Classic southern Italian fare like eggplant parmigiana, ragù Napoletano, and grilled meats with herbs and garlic also work exceptionally well. Serve at 16–18°C (60–64°F) for optimal expression. Decanting is strongly recommended—give it at least 1–2 hours in a carafe if drinking now to soften the tannins and allow the bouquet to fully unfurl; older bottles can be decanted more gently to avoid disturbing sediment.
