Production
This wine is made in Tuscany from a blend of Cabernet Sauvignon, Merlot, and Sangiovese, varieties that complement each other in both structure and aromatic expression. Fermentation takes place in temperature-controlled stainless-steel tanks, including malolactic fermentation, which helps round out the wine’s texture before maturation. It then spends 12 months in third- and fourth-use barriques, followed by at least 3 months of bottle ageing before release.

Eliseo Rosso 2021 pairs well with grilled red meats, roast lamb, game, and Tuscan-inspired dishes such as pasta with rich meat sauces or aged pecorino. Serve it at around 16–18°C to bring out its balance and aromatic detail. Decanting is recommended for about 30 minutes if you want to soften the tannins and let the wine open up more fully.
