The 2023 vintage is expected to show a deep ruby colour, reflecting the concentration and freshness typical of Pauillac. Aromatically, it should offer blackcurrant, blackberry, cedar, graphite, and subtle floral notes, with a hint of spice and toasted oak in the background. On the palate, Griffons de Pichon Baron usually balances ripe dark fruit with firm tannins and a mineral backbone, giving the wine both precision and length. Produced from vineyards in Pauillac on Bordeaux’s Left Bank, the wine benefits from gravelly soils that naturally drain well and encourage Cabernet Sauvignon to ripen with intensity and finesse. Harvesting is typically done parcel by parcel to preserve the character of each plot, followed by careful vinification aimed at maintaining purity, structure, and aromatic detail.

This wine pairs beautifully with roast lamb, grilled ribeye, duck breast, beef tenderloin, and dishes with mushrooms or truffle accents. Serve at around 16–18°C, and decant for about an hour if drinking young to allow the wine to open and soften.
