Griffons de Pichon Baron is the estate’s second wine, offering a beautifully approachable expression of Pauillac with the pedigree of one of Bordeaux’s most respected châteaux. The 2022 vintage brings together classic Left Bank structure, refinement, and a polished style that makes it an appealing entry point into the Pichon Baron universe.

Tasting Notes
Deep ruby in the glass, the wine opens with aromas of blackcurrant, ripe blackberry, cedar, graphite, and subtle spice. On the palate it is full-flavoured yet composed, with firm but finely shaped tannins, dark fruit intensity, and a savoury mineral edge that reflects its Pauillac origins. The finish is long and graceful, with freshness balancing the wine’s depth and concentration. While already expressive, it should reward several years in bottle, developing further complexity and softness over time.

Production
Sourced from vineyards in Pauillac on Bordeaux’s Left Bank, the wine benefits from the region’s gravelly soils, which provide excellent drainage and encourage Cabernet-driven wines with precision and structure. The grapes are typically harvested by hand and vinified with care to preserve purity of fruit, then aged in oak to add texture, lift, and a subtle cedar-spice frame.

Food & Serving
Ideal with roasted lamb, beef tenderloin, duck breast, or game dishes, as well as mature hard cheeses. Serve at around 16–18°C, and decant for about 1 hour if drinking young to allow the aromatics and tannins to open fully.
