Tasting Notes
In the glass, the Rosé Extra Brut Prestige 2020 presents a shimmering, pale to medium salmon color with fine, persistent bubbles and a delicate mousse. The nose is strikingly complex: dark, earthy and herbal spice notes mingle with juniper and allspice, hints of menthol tobacco, orange peel and a subtle smoky, cured nuance.
On the palate, it is both concentrated and elegant—densely textured yet remarkably slender, carried by a vibrant, straight-line acidity. Red berry tones and citrus zest play against savory spice and mineral freshness, creating a long, dry, highly precise finish. Structured and serious, this is a rosé sekt built not only for immediate pleasure but also with a few years of cellaring in mind; expect it to evolve beautifully over the next 3–5 years, gaining even more complexity and creaminess.
Production
Sourced from carefully selected Pinot Noir (Spätburgunder) vineyards in the Hessische Bergstraße, this sparkling wine reflects the region’s cool climate, calcareous and loess-influenced soils, and gentle slopes that favor slow, even ripening. Grapes are harvested by hand at a relatively low must weight to preserve acidity and finesse, with strict selection in the vineyard and at the winery. After a gentle pressing of whole clusters to obtain delicately colored juice, the base wine is fermented and refined before undergoing a traditional second fermentation in bottle. Extended lees aging (typical for Griesel’s Prestige line) adds texture, fine mousse and savory complexity, while the Extra Brut dosage keeps the style focused and razor-sharp.
Food & Serving
This is a gastronomic rosé sparkling that shines with subtly rich and savory dishes: think charcuterie, smoked trout, cured salmon, vitello tonnato, roast poultry, lightly spiced Asian cuisine, or grilled vegetables with herbs. Its spicy, earthy complexity also works beautifully with mushroom dishes and soft-ripened cheeses. Serve well chilled at around 8–10°C (46–50°F). A short decant in a carafe, or simply pouring into larger white wine glasses, can help the aromatics unfurl, especially if the wine is enjoyed within a year or two of release.
