Griesel & Compagnie Grande Cuvée Dosage Zero Exquisit 2019 is a finely crafted German sparkling wine that showcases just how serious the Hessische Bergstraße can be when it comes to premium bubbles. Made in a Brut Nature style with no dosage, it offers a pure, unadorned expression of its multi-varietal blend. This cuvée has already impressed in earlier vintages, with accolades from Falstaff highlighting its charm, class and character.
Tasting Notes
In the glass, the 2019 Grande Cuvée Dosage Zero Exquisit presents a pale straw to light golden hue, animated by a very fine, persistent mousse and delicate bead. On the nose, expect subtle notes of fresh apple peel, lemon zest and white blossom, layered with hints of shortcrust pastry, brioche and a gentle saline edge—a profile reminiscent of the celebrated 2015, yet with the added tension and clarity of a superb vintage.
The palate is dry, linear and precise, with no sugar to soften the edges—everything here is about structure, minerality and depth of fruit. Crisp orchard fruit and citrus are tightly woven with nuances of toasted nuts, biscuit and chalky minerality. The mousse is incredibly fine, wrapping these firm lines in a creamy texture without ever feeling heavy. The finish is long, saline and mouthwatering, leaving an impression of energy and finesse. With its concentration and acidity, this 2019 has very good aging potential; it will gain even more complexity and tertiary nuances over the next 5–8 years in the cellar.
Production
The Grande Cuvée Dosage Zero Exquisit 2019 is sourced from carefully selected vineyards in the Hessische Bergstraße, one of Germany’s smallest and most exciting regions, characterized by steep slopes, diverse soils (including loess, sand and limestone) and a relatively mild, sunny climate. Chardonnay, Spätburgunder (Pinot Noir), Schwarzriesling (Pinot Meunier) and Weißburgunder (Pinot Blanc) are harvested by hand at optimal ripeness, with strict selection in the vineyard to ensure only pristine fruit makes it into the press. Vinification follows the traditional method for high-end sparkling wines: gentle whole-bunch pressing, primary fermentation in stainless steel and, in part, in small oak to build texture and complexity, followed by extended lees aging in bottle after the second fermentation. The dosage is omitted entirely (Dosage Zero), allowing the natural balance of fruit, acidity and terroir-driven minerality to shine without any added sweetness.
Food & Serving
This is a gastronomic sparkling wine built for the table. Its brisk acidity and saline finish make it an excellent match for oysters, ceviche, scallops and other delicate seafood, as well as sushi and sashimi. It also pairs beautifully with grilled white fish, poultry with lemon and herbs, lightly creamy pasta dishes, and fine charcuterie or soft-rind cheeses like Brie or Camembert. Serve well chilled, ideally at 7–9 °C, to emphasize its freshness and precision. A brief decanting in a wide-bowled sparkling wine glass (or simply letting it open in the glass for a few minutes) can help the aromatics unfold, but a full decant is not strictly necessary—good stemware and time in the glass will do the work.
