Tasting Notes
In the glass, it shows a pale straw color with a fine, persistent mousse. The nose is elegant and clean, with notes of green apple, citrus zest, white flowers, fresh bread, and a subtle mineral edge that reflects its mountain origins. On the palate, it is crisp and linear, combining lively acidity with a creamy texture and a dry, focused finish. The absence of dosage gives the wine extra tension and clarity, allowing the Chardonnay fruit and alpine freshness to take center stage. While already very enjoyable, it has the structure to develop gracefully over the next few years.

Production
Produced in Trentino Alto Adige under the Trentodoc appellation, this wine comes from vineyards influenced by cool mountain temperatures, good diurnal range, and mineral-rich soils that help preserve freshness and aromatic finesse. The grapes are typically harvested by hand at optimal ripeness to retain acidity and precision, then vinified using the traditional method with a second fermentation in bottle and extended lees aging to build texture and complexity. As a pas dosé, no expedition liqueur is added after disgorgement, resulting in a particularly dry and transparent style.

This sparkling wine is a natural match for oysters, shellfish, sashimi, sushi, light fish dishes, and refined vegetarian plates such as asparagus risotto or tempura vegetables. Serve well chilled at 6–8°C, and no decanting is needed; opening it shortly before pouring is enough to let its freshness and delicate aromas show at their best.
