Pierre Gimonnet & Fils’ Cuis Brut is a beautifully precise Blanc de Blancs that captures the house style at its most vibrant: airy, refined, and perfectly balanced. Built around Chardonnay from Premier Cru Cuis and carefully layered with reserve wines, it’s a classic Champagne with impressive freshness and a quiet historical pedigree.
Tasting Notes
Pale gold in the glass with a lively, persistent mousse. The nose is bright and elegant, offering citrus peel, green apple, white flowers, and a subtle mineral edge, with extra complexity from the reserve wines.
On the palate, it feels crisp yet rounded, with excellent tension and a creamy texture balanced by zesty acidity. Notes of lemon curd, pear, chalk, and toasted brioche lead to a long, focused finish. Thanks to its structure and balance, it will age gracefully for several years, gaining more depth and nuance over time.
Production
This Champagne comes from Premier Cru Cuis in the Côte des Blancs, a chalk-rich terroir that gives Chardonnay its hallmark purity and finesse. Pierre Gimonnet & Fils is known for blending the current vintage with reserve wines kept on the lees in bottle rather than in cask, a rare method that preserves freshness and allows older lots to retain their vivid character. The result is a cuvée assembled with precision to express the domaine’s signature style year after year.
Food & Serving
Serve well chilled, ideally around 8–10°C. It is an excellent match for oysters, scallops, sushi, lobster, creamy goat cheese, or delicate poultry dishes, and it also works beautifully as an aperitif. Decanting is not recommended; simply open and pour to preserve its lively mousse and aromatic clarity.
