Gilles & Catherine Vergé Viré-Clessé Coteaux des Quarts 2007 is a mature white Burgundy that showcases just how beautifully Chardonnay from the Mâconnais can age. Sourced from one of the finest climats in Viré-Clessé, this wine brings together old-vine concentration, limestone-driven finesse and the patina of nearly two decades in bottle. With only a few bottles still available, it’s a rare chance to experience a fully developed, artisan Burgundy from a benchmark grower.

Tasting Notes
In the glass, the 2007 Coteaux des Quarts shows a deep lemon-gold hue with hints of amber at the rim, reflecting its age and concentration. The nose is complex and evolving: ripe orchard fruits (baked apple, pear tarte), preserved lemon and yellow plum are layered with notes of acacia honey, toasted hazelnut, brioche and subtle smoke, underpinned by a chalky, mineral edge. On the palate, the wine is medium to full-bodied with a silky, almost waxy texture and a beautifully integrated acidity that keeps everything fresh despite the richness. Flavors of roasted almonds, lemon curd, dried apricot and mirabelle are interwoven with savory nuances—beeswax, warm stone, and a gentle saline grip on the finish. The 2007 is now in its prime drinking window, offering fully developed tertiary complexity. It should continue to drink well for a few more years if well cellared, but this is very much a wine to enjoy now for its evolved, harmonious character.

Production
Coteaux des Quarts is considered one of the great terroirs of Viré-Clessé, a high-quality enclave in the Mâconnais where limestone-rich soils and well-exposed slopes yield Chardonnays of notable precision and depth. The vineyards used by Gilles & Catherine Vergé are typically old vines rooted in clay-limestone with good drainage, contributing to naturally low yields and concentration in the fruit. Grapes are harvested by hand at optimal ripeness to preserve both freshness and aromatic intensity. In the cellar, the Vergés are known for a relatively low-intervention approach: gentle pressing, native yeast fermentations and élevage on the lees, often in a mix of neutral barrels and/or tanks, allowing the texture to build without overwhelming the purity of the fruit. Minimal additions and careful handling help the terroir and vintage shine clearly in the finished wine.

Food & Serving
This mature Viré-Clessé is superb with richer dishes that can stand up to its texture and nutty, evolved complexity: think roast chicken with morels, veal blanquette, lobster or scallops in a buttery sauce, or creamy fish dishes. It also pairs beautifully with aged Comté, Gruyère, and other semi-hard alpine cheeses, as well as mushroom-based risottos. Serve slightly cool, around 11–13 °C (52–55 °F), rather than fridge-cold, to allow the aromatics to open. A gentle decant of 20–30 minutes can help the wine stretch its legs, especially if any light bottle reduction is present, but avoid overly vigorous aeration to preserve its delicate, mature nuances.
