Tasting Notes
In the glass, the 2018 Barolo Riserva shows a brilliant garnet hue with the characteristic brick-orange rim that hints at its slow evolution and future complexity.
The nose opens gradually, revealing layers of dried red cherries, rose petals, violet, and tar, intertwined with notes of licorice, tobacco, leather and subtle spice. Earthy undertones of truffle, dried herbs and cedar emerge with air, adding depth and refinement. On the palate, it is firmly structured yet finely woven, with precise Nebbiolo tannins framing flavors of sour cherry, wild strawberry, blood orange, and dried plum. Savory notes of tobacco leaf, underbrush and iron minerality echo the classic Barolo profile, while vibrant acidity keeps everything taut and energetic. The finish is long, dry and persistent, with lingering notes of rose, spice and earthy minerality.
As a Riserva, this wine is built for aging. While already approachable with ample aeration, its structure and concentration suggest an excellent drinking window developing over the next 10–20 years, gaining further complexity, tertiary aromas and silkier texture with time in the cellar.
Production
The fruit for this Barolo Riserva comes from Borgogno’s finest crus in Barolo: Cannubi, Liste, Fossati and San Pietro di Viole. These sites combine calcareous clay and marl with varying exposures and altitudes, giving Nebbiolo both elegance and power, aromatic lift and firm structure. Harvest is typically carried out by hand to ensure careful selection of perfectly ripe, healthy clusters. In the cellar, Borgogno adheres to a traditional Barolo style: extended maceration on the skins and fermentation in temperature-controlled tanks, followed by long aging in large Slavonian oak casks. The Riserva then rests further in bottle before release, allowing the components to harmonize and the wine’s classic Barolo character to fully develop.
Food & Serving
This Barolo Riserva calls for equally refined and savory dishes. It pairs beautifully with braised meats (osso buco, brasato al Barolo, short ribs), roasted game, lamb, and aged hard cheeses such as Parmigiano-Reggiano or mature Pecorino. It also works wonderfully with truffle-based dishes, rich mushroom risottos and slow-cooked ragù over fresh pasta. Serve at about 16–18°C (60–64°F). For optimal enjoyment, decant at least 1–2 hours before serving in its youth to allow the bouquet to open and the tannins to soften; older bottles will benefit from a gentler, shorter decant to remove sediment and awaken the aromatics.
