Crafted in the cool foothills of the Dolomites, it offers a beautifully precise expression of the grape, with bright fruit and racy freshness. Alto Adige has a long tradition of mountain viticulture, and this wine channels that heritage into a modern, elegant style ideal for everyday fine drinking.

Tasting Notes
In the glass, this Sauvignon shows a pale straw to light lemon hue, with silvery-green reflections that hint at its youthful energy. The nose opens with lifted aromas of gooseberry, lime zest and green apple, layered with notes of elderflower, fresh-cut herbs and a delicate mineral edge reminiscent of wet stone and mountain air. On the palate, it is dry, medium-bodied and intensely refreshing, with lively acidity that drives the flavors forward. Citrus and orchard fruits are joined by hints of white currant, grapefruit pith and a subtle, savory herbal tone, giving the wine both clarity and complexity. The finish is clean and persistent, marked by a mouthwatering, saline-mineral snap. Enjoyed now, it shines for its youthful vibrancy, but it has the structure to develop a little more complexity over the next 2–4 years, gaining softer edges and deeper, more layered aromatics.

Production
Grown in Alto Adige’s cool, mountainous vineyards, the Sauvignon grapes benefit from a mix of calcareous and alluvial soils and strong diurnal temperature swings, which help to preserve acidity and build aromatic intensity. Grapes are typically harvested by hand in the early morning to maintain freshness, then gently pressed to protect delicate aromatics. Fermentation is carried out at controlled, cool temperatures in stainless steel, emphasizing purity of fruit and crispness. The wine usually rests on fine lees for a short period before bottling, adding a touch of texture and complexity without overshadowing its clean, mineral-driven profile.

Food & Serving
This Alto Adige Sauvignon is a natural match for light, bright dishes: think goat cheese salads with citrus, grilled asparagus, tomato and basil bruschetta, ceviche, sushi, or simple grilled white fish with herbs and lemon. It also works beautifully with fresh goat cheeses, young pecorino, and vegetable-led Mediterranean cuisine. Serve well-chilled at around 8–10°C (46–50°F) to highlight its freshness and aromatics. Decanting is not necessary, but pouring it into glasses 5–10 minutes before serving will allow the bouquet to open up nicely.
