Georges Laval Champagne 1er Cru Les Hautes Chèvres Cumières Brut Nature 2019 is a striking, terroir-driven expression of Pinot Meunier from the heart of the Champagne region in France. Sourced from a single, premier cru lieu-dit in Cumières and bottled without dosage, it offers a crystal-clear view of the vintage and vineyard. This cuvée is a rare, low-production grower Champagne that showcases the depth and nobility of old-vine Meunier, a grape long considered Champagne’s quiet insider secret.

Tasting Notes
In the glass, the 2019 Les Hautes Chèvres shows a luminous, pale gold hue with fine, persistent bubbles that form a delicate mousse. The nose is precise and complex, opening with notes of ripe orchard fruit—yellow apple and pear—alongside white peach, citrus zest, and crushed chalk. With air, more subtle layers emerge: toasted hazelnut, brioche, dried flowers and a faint hint of spice. On the palate, this Brut Nature is racy and incisive yet surprisingly generous for a zero-dosage Champagne. The Pinot Meunier brings a beautiful core of juicy, pulpy fruit—Mirabelle plum, quince and baked apple—wrapped in a firm spine of saline minerality and vibrant acidity. The texture is both tense and vinous, with great energy and length, finishing on notes of citrus peel, wet stone and a touch of bitter almond. Drinking beautifully now with some air, it has the structure and concentration to evolve gracefully over the next 8–12 years, gaining further complexity and tertiary nuances.

Production
Les Hautes Chèvres comes from a steep, well-exposed premier cru parcel in Cumières, a village known for its warm microclimate and chalk-and-clay soils that give Pinot Meunier remarkable depth and precision. Georges Laval farms this vineyard organically and by hand, with very low yields from old vines to maximize concentration and purity of fruit. Harvest is carried out manually at optimal ripeness, with rigorous sorting in the vineyard and cellar. Fermentation typically occurs with native yeasts in small oak barrels, and the wine is aged on its lees to build texture and complexity. Bottled as Brut Nature with no dosage, it is made with minimal intervention, allowing the terroir, vintage and Meunier character to speak clearly.

Food & Serving
This Champagne’s tension and vinous depth make it extremely versatile at the table. It pairs beautifully with refined seafood dishes such as scallops, oysters, turbot, or poached lobster, but also stands up to richer fare like roast chicken, veal in a light cream sauce, or mushroom-based dishes and aged hard cheeses. Serve well-chilled but not icy, ideally around 9–11°C (48–52°F), to allow the aromatics to unfold. A short decant in a carafe, or simply opening the bottle 15–20 minutes before serving and pouring into proper white-wine or tulip-shaped Champagne glasses, will help this cuvée fully express its complexity.

Producer
Georges Laval is a small, highly regarded grower-producer based in Cumières in the Champagne region of France, with roots dating back to the late 19th century. Under the guidance of Vincent Laval, the estate has become one of the benchmarks for organically farmed, low-intervention Champagne, long before such practices were fashionable in the region. Laval’s holdings are tiny and almost entirely in premier cru sites, producing wines that are consistently sought after for their purity, intensity and strong sense of place. Renowned among sommeliers and collectors, the domaine is celebrated for its commitment to meticulous vineyard work, minimal yields, and a transparent, terroir-first style that has earned it a cult following in the world of grower Champagne.
