Gabe Conegliano Valdobbiadene Rive di San Michele Fior di Sale Brut 2025 is an elegant expression of Glera from the prestigious Conegliano Valdobbiadene Prosecco Superiore DOCG area. With its fine, creamy bubbles, floral character and distinctive saline finish, it offers a refined interpretation of Prosecco rooted in the mineral-rich hills of San Michele di Feletto. The name “Fior di Sale” pays homage to the salt crystals left behind by the ancient sea, reflected in the wine’s fresh, mineral profile.

Tasting Notes
Bright straw yellow in appearance, the wine is animated by a fine and persistent perlage with a pleasantly creamy texture. The nose opens with delicate aromas of rose and acacia, followed by notes of green apple, peach and citrus. On the palate, it is fresh, balanced and lively, combining ripe orchard fruit with floral nuances and a pronounced mineral character. The finish is clean and subtly saline, giving the wine an appealing sense of freshness. As a Brut Prosecco, it is best enjoyed young to preserve its vibrant fruit and aromatic precision, although it can be kept for a short period under suitable conditions.

Production
The Glera grapes come from vineyards in San Michele di Feletto, in the heart of the UNESCO-recognised Conegliano Valdobbiadene hills. Located at approximately 100–150 metres above sea level with south and south-western exposure, the vineyards benefit from excellent sunlight and ripening conditions. The calcareous clay soils, rich in yellow-blue marl, contribute distinctive mineral notes, while the double-arched vine training system helps maintain balanced yields. Harvest takes place in late September, followed by gentle pressing and static clarification. Fermentation is carried out at a controlled 18–19°C, while the second fermentation takes place in large tanks according to the Charmat method for 30–40 days. The wine then rests on its fine lees for at least three months, enhancing its texture while preserving the fresh, characteristic aromas of Glera.

Food & Serving
Its bright acidity, subtle salinity and creamy mousse make this Prosecco an excellent partner for sushi, sashimi, raw and cooked seafood, fish appetisers and shellfish. It also works beautifully with fresh cheeses, light starters and delicate vegetable dishes. Serve well chilled at approximately 6–8°C. Decanting is not recommended; chill the bottle gently and open just before serving to preserve the wine’s lively bubbles and aromatic freshness.

The winery’s Fior di Sale celebrates the UNESCO-listed landscape and the mineral character of the local soils through a carefully crafted Conegliano Valdobbiadene Prosecco Superiore DOCG. Produced with attention to the integrity of the Glera grape and the traditional Charmat method, it offers a polished and expressive ambassador for this celebrated corner of Veneto.
