Description
Gabe Clorofilla is a refined Extra Brut Prosecco Superiore from the prestigious Rive di Guia in Conegliano Valdobbiadene DOCG. Made exclusively from Glera and fermented using the traditional Charmat method, it combines exceptionally fine bubbles with pronounced freshness, saline minerality and an elegant, completely dry finish. The wine reflects the historic sparkling-wine culture of the UNESCO-listed Conegliano Valdobbiadene hills.
Tasting Notes
The wine is pale straw yellow with delicate greenish highlights and a very fine, persistent perlage. Its nose is fresh and expressive, bringing together subtle floral aromas with notes of green apple, pear and bright citrus.
On the palate, it is distinctly dry, vibrant and beautifully balanced by lively acidity. A gently saline character adds depth, while the lingering mineral finish gives the wine impressive definition and elegance. It is best enjoyed in its youth, when its floral, citrus and mineral qualities are at their most vivid, although its structure should allow it to develop gracefully over the short term.
Production
The Glera grapes are grown on steep, south- to southwest-facing slopes at approximately 260 metres above sea level in Rive di Guia. The deep clay soils, formed from sandy and stony conglomerates, are generally acidic, low in limestone and capable of retaining water, encouraging deep rooting and contributing to the wine’s distinctive mineral character. Harvest takes place towards the end of September, followed by gentle pressing with only the free-run juice selected. After static settling, the must ferments at controlled temperature with selected yeasts. The wine then rests on fine lees for at least three months before undergoing its second fermentation in large tanks for 30–40 days according to the Charmat method, creating its refined bubbles and persistent flavour.
Food & Serving
Serve well chilled at approximately 6–8°C. Its crisp acidity, dry profile and saline finish make it a natural partner for oysters, shellfish, sushi, fresh fish, seafood salads and delicate antipasti. It also works beautifully with fresh goat’s cheese, tempura and light vegetable dishes. Decanting is not recommended; serve immediately after opening in a tulip-shaped sparkling-wine glass to preserve its delicate aromas and perlage.

Gabe Clorofilla was created from Gabriella Benedetta Vettoretti’s vision, drawing inspiration from the historic wine traditions of the Cartizze hills and the wider Conegliano Valdobbiadene area. The name refers to chlorophyll, the life-giving pigment in plants, reflecting the wine’s vibrant, vegetal freshness. Produced from prestigious Rive di Guia vineyards in the heart of the Conegliano Valdobbiadene DOCG, the wine expresses the region’s identity through its lively acidity, saline minerality and elegant persistence.
