Production
The Brauneberger Juffer Sonnenuhr vineyard is one of the Mosel’s crown jewels: a steep, south- to southwest-facing slope overlooking the Mosel River, with exceedingly thin, weathered Devonian slate soils. This combination of exposure, poor rocky soils, and reflected sunlight from the river creates ideal conditions for slowly ripening Riesling, concentrating flavor while preserving vibrant acidity. At Fritz Haag, the grapes are typically harvested by hand, often in multiple passes (selection by ripeness and health) to achieve optimal balance for Spätlese-level fruit, with careful sorting to retain only the finest berries. In the cellar, the must is gently pressed and allowed to ferment slowly, commonly with ambient or carefully selected yeasts, in stainless steel or traditional large old oak casks. Fermentation is stopped at the point where the interplay of natural residual sugar, alcohol, and acidity reaches perfect harmony, followed by maturation on fine lees to enhance texture and complexity before bottling.

Serve this Riesling well-chilled but not icy, ideally around 8–10°C (46–50°F), to allow the aromatics and texture to express themselves fully. A short decant of 15–30 minutes in a small carafe can help a younger or just-opened bottle unfold its aromatics, though older, well-aged bottles are best handled gently and poured directly after allowing them to rest upright for some time.
