Tasting Notes
In the glass, it shows a fine, persistent mousse and a luminous, elegant appearance. The bouquet is fresh and lifted, with notes of citrus, green apple, white flowers, and a marked stony mineral character, reflecting the cool mountain climate and volcanic soils of Irpinia. On the palate, it is crisp, vibrant, and well-defined, with a clean, dry profile and a refreshing saline edge. The texture is polished, and the finish is energetic and savory, making it a sparkling wine that feels both refined and characterful. It is best enjoyed young for its vivid freshness, though its structure gives it room to develop more complexity over time.

Production
DUBL is produced in Irpinia, in the mountainous heart of Campania, where altitude, heavy rainfall, snowfall, and strong winds create an unusually cool climate for southern Italy. The vineyards are rooted in volcanic soils, which contribute to the wine’s tension, minerality, and freshness. The project was originally inspired by the goal of translating Campania’s native grapes into the Metodo Classico style, working with the guidance of Champagne expert Anselme Selosse to unlock their sparkling potential. Vinification follows traditional sparkling-wine methods, with a focus on precision and purity.

Food & Serving
This Brut works beautifully as an aperitif and pairs especially well with shellfish, oysters, grilled fish, sushi, light pasta dishes, and delicate risottos. It also complements fried seafood and mild cheeses. Serve well chilled, ideally around 6–8°C, and decanting is not recommended.
