Tasting Notes
In the glass, Saffredi 2019 shows an opaque, almost inky ruby core with a vibrant, youthful rim—concentrated and luxurious from the first pour. The nose is explosive and layered: blackcurrant, ripe blackberry and plum compote mingle with graphite, cedar, tobacco leaf and hints of dark chocolate, espresso and dried Mediterranean herbs. Subtle notes of violets and sweet spices add lift and complexity as the wine opens.
On the palate, this 2019 is dense and compact yet remarkably refined, with a velvety, almost creamy texture wrapping around a firm, finely etched tannic backbone. Ripe black fruits are at the core—cassis, black cherry, mulberry—supported by savoury undertones of leather, pencil shavings, licorice and a touch of balsamic. The finish is long, polished and persistent, driven by fresh acidity and perfectly integrated oak. In this 6L Imperial format, the aging potential is outstanding: properly cellared, this wine should evolve gracefully for 20–30 years, gaining additional complexity, tertiary notes and even greater harmony.
Production
Saffredi is crafted from vineyards in the coastal Maremma zone of southern Tuscany, where warm days, cooling sea breezes and well‑drained soils of sand, clay and stones produce intensely flavoured, naturally structured grapes. Fruit is carefully hand‑harvested parcel by parcel at optimal ripeness, with strict selection both in the vineyard and at the sorting table. Each variety is vinified separately in temperature‑controlled tanks, with a focus on gentle extraction to preserve purity and finesse rather than sheer power. The wine typically undergoes malolactic fermentation in barrel and is then aged in French oak (a significant portion new) to build texture, complexity and polish, before the final blend is assembled and bottled—here in the larger‑format Imperial that promotes particularly slow, graceful maturation.
Food & Serving
This commanding Tuscan red deserves equally serious cuisine: think dry‑aged bistecca alla fiorentina, grilled ribeye, slow‑braised beef short ribs, venison loin with juniper, or lamb shoulder with rosemary and garlic. It also pairs beautifully with rich ragùs, truffle dishes, aged Tuscan pecorino and hard, nutty cheeses. Serve at 16–18°C (about 60–64°F); given the concentration of the 2019 and the large Imperial format, decant generously—at least 2–3 hours in youth, and even longer for a truly monumental showing. For special occasions, opening the bottle a few hours in advance and using a wide‑based decanter will help this wine fully stretch its legs.
