Tasting Notes
In the glass, the 2018 Saffredi shows a deep, opaque ruby color with a vibrant rim, hinting at both concentration and youth. The nose is layered and refined, opening with ripe black cherry, dark plum and cassis, followed by nuances of violet, graphite, cedar, dried tobacco leaf and a subtle, smoky, ember-like note as it warms in the glass. On the palate, the wine is full-bodied yet impeccably balanced, with a core of dark fruit wrapped in fine, well-measured tannins. Flavors of blackcurrant, black cherry and damson are lifted by tones of cocoa, baking spice, licorice and a touch of savory herbs. The acidity is fresh and precise, giving the wine energy and length, while the finish is long, elegant and gently spicy. In magnum, this 2018 has excellent aging potential: it will drink beautifully from now with proper aeration, but will gain complexity and silkiness over 12–20 years in a good cellar.

Production
Saffredi is sourced from Fattoria Le Pupille’s estate vineyards in the Maremma area of southern Tuscany, where warm Mediterranean breezes, abundant sunshine and well-drained, mixed clay and sandy soils create ideal conditions for late-ripening Bordeaux varieties. Yields are kept low and grapes are typically harvested by hand, parcel by parcel, to ensure optimal ripeness and meticulous selection both in the vineyard and at the winery. The blend of Cabernet Sauvignon, Merlot and Petit Verdot is vinified in temperature-controlled tanks, with careful extraction to preserve finesse, followed by maturation in small French oak barriques (a significant proportion new) to build structure, polish the tannins and add subtle layers of spice and complexity.

Food & Serving
This is a serious, gastronomic red that shines alongside richly flavored dishes such as bistecca alla fiorentina, slow-braised beef or lamb, game birds, truffle pastas, and aged hard cheeses like Parmigiano Reggiano or pecorino. Serve at 16–18 °C (60–64 °F) to highlight its freshness and aromatics. In magnum, the 2018 Saffredi benefits from generous aeration: decant 2–3 hours before serving in its youth, and at least 1 hour even as it develops with age, to allow the bouquet and texture to fully unfurl.
