Primo Fuoco Rosso Toscano 2021 is a striking, pure Cabernet Sauvignon from Fattoria di Sammontana, crafted in traditional terra-cotta amphorae rather than oak. This certified-organic, biodynamically farmed red captures a vivid, unadorned expression of Tuscan Cabernet: dark-fruited, savory, and quietly wild. Named after the “first firing” of the amphorae, it marries ancient vessel craftsmanship with a thoughtful, low-intervention approach in the cellar.
Tasting Notes
In the glass, Primo Fuoco Rosso shows a deep, vibrant ruby color with a slight violet rim, hinting at both concentration and freshness. The nose opens with dark red and black fruits—ripe cherry, blackcurrant (cassis), and wild berries—layered with subtle earthy notes, a faint animal edge, and delicate smoky, mineral undertones from the amphora aging.
On the palate, the wine is juicy, energetic, and medium to full-bodied, with a core of ripe cherry and cassis wrapped in fine, chalky tannins. There’s a savory dimension—hints of tobacco leaf, crushed herbs, and warm stone—that keeps the fruit in balance and lends real complexity. The amphora elevage preserves purity and tension, giving a clean, dry finish with good length and a gently mouthwatering freshness. Enjoyable now for its vibrancy and texture, it should evolve nicely over the next 5–7 years, gaining a bit more nuance and softness while maintaining its lively character.
Production
The Cabernet Sauvignon vines, aged between 30 and 50 years, are rooted in former alluvial soils rich in stones and pebbles—well-draining, mineral substrata that naturally limit vigor and concentrate flavor. The estate is farmed to certified-organic standards and follows biodynamic principles, including yield reduction through a green harvest and a strictly selective hand-picking at optimal ripeness. In the cellar, the grapes undergo spontaneous fermentation on the skins with native yeasts, without added enzymes or other oenological additives. Fermentation and aging take place over roughly eight months in 500-liter terra-cotta amphorae, vessels that guide the fermentation differently from wood and allow gentle micro-oxygenation without imparting oak flavor. The wine is bottled unfiltered, with only minimal sulfur, to preserve its authenticity and textural integrity.
Food & Serving
Primo Fuoco Rosso is an excellent partner for Tuscan-inspired dishes such as grilled bistecca alla fiorentina, rosemary lamb chops, wild boar ragù, or hearty pasta with porcini mushrooms. It also works beautifully with aged pecorino, charcuterie, and roasted root vegetables with herbs. Serve at 16–18°C (60–64°F) to show its full aromatic range, slightly cool rather than warm. A brief decant of 30–45 minutes helps the wine open up, softening the tannins and letting the darker fruit and earthy, smoky nuances fully emerge.
