Description
Fattoria di Sammontana Primo Fuoco Rosato Bio 2023 is a characterful Tuscan rosé crafted from 100% biodynamically farmed Merlot and aged in traditional clay amphorae. The name “Primo Fuoco” refers to the first firing of the amphorae, highlighting the artisanal, low‑intervention approach behind this wine. Unfiltered, minimally sulfured and spontaneously fermented, it offers an authentic snapshot of Merlot grown in the gentle hills of Tuscany.
Tasting Notes
In the glass, Primo Fuoco Rosato Bio 2023 shows a luminous, pale ruby with a rosé-like translucence rather than a classic salmon hue. The nose starts out discreet and refined, gradually opening to notes of delicate red berries, dried cranberries and cherries, lifted by hints of mandarin zest and freshly pressed blood orange.
On the palate, the wine is juicy, savory and strikingly fresh, with a vibrant acid line that keeps everything mouth‑watering and energetic. Subtle, fine‑grained tannins add grip and structure without ever feeling heavy, while the citrus peel and blood orange notes return on the finish with a faintly bitter, tonic‑like twist that enhances drinkability. This is a rosé best enjoyed in its youth for maximum freshness and tension, but it has the structure to evolve pleasantly over the next 2–3 years, gaining a bit more savory complexity.
Production
The grapes for Primo Fuoco Rosato Bio 2023 come from biodynamically tended vineyards in Tuscany, where warm days, cool nights and well‑drained, mineral‑rich soils foster concentrated yet balanced Merlot. The fruit is hand‑harvested to ensure careful selection in the vineyard, then gently pressed directly after picking to capture purity and delicacy of color. Fermentation occurs spontaneously with native yeasts in 500‑liter clay amphorae, where the wine also matures for about six months. It is then bottled unfiltered, with only a very small addition of sulfur, resulting in a genuine low‑intervention expression that reflects both grape and place.
Food & Serving
This amphora‑aged Tuscan rosato is a versatile food partner, pairing beautifully with antipasti, charcuterie, grilled vegetables, tomato‑based dishes, Mediterranean salads, seafood stews, and simple grilled fish or chicken. It also works well with dishes featuring herbs, citrus and a touch of spice, such as roast vegetables with harissa or herb‑marinated lamb skewers. Serve at 10–12°C to highlight its freshness and aromatic detail; a brief 15–20 minutes in the fridge before opening is ideal. A light, short decant or serving it in a white‑wine glass helps the initially restrained nose to open up and show its full range of citrus and red‑fruit nuances.
