This is an excellent match for grilled or roasted meats, game, aged cheeses, and rich pasta dishes with ragù or mushroom sauces. Serve it at around 16–18°C, and decanting for 1–2 hours is recommended if you want to open up its aromatic complexity and soften the tannins.
