Sourced from the single vineyard “Les Margas,” this cuvée offers an unapologetically distinctive expression, balancing opulence with razor‑fine precision. With minimal intervention in the cellar and ultra‑low sulfur additions, it delivers a raw yet harmonious snapshot of Chenin and terroir in perfect sync.

Tasting Notes
In the glass, Les Margas 2019 appears lightly hazy, a visual cue to its natural, unfiltered style. The color tends toward a dense, golden straw, hinting at both ripeness and extended aging on lees. The nose is strikingly original and generous: fully ripe apricots—both fresh and dried—layer with acacia honey and an exotic, savory curry note. There’s a suggestion of mature sweet wine aromatics, yet framed in a dry, vinous context that keeps it intriguing rather than heavy. On the palate, the wine initially feels dense, broad, and almost glyceric—rich to the point of seeming almost “fat” at first sip. Then it pulls rapidly into focus, tightening around a lean, minimalist core. Dark, earthy spice and a pulsating, schist‑driven minerality run through the mid‑palate, carried by a wiry, compact structure. The acidity is remarkably gentle and integrated rather than sharp, giving an impression of calm balance instead of tension. Already expressive and complex now, this 2019 has the stuffing and structure to evolve further in bottle over the next 5–8 years, gaining even more tertiary nuance and depth.

Production
Les Margas is a single site characterized by light, pale clay over a subsoil rich in schist, a combination that lends both texture and a deep mineral drive to Chenin Blanc. Grapes are farmed and harvested with a natural wine mindset, focusing on healthy fruit and careful picking at optimal ripeness. In the cellar, the wine is fermented spontaneously with indigenous yeasts, without technological manipulation, and raised for 14 months in inert fiberglass tanks to preserve purity of fruit and terroir. Sulfur is added only in homeopathic quantities (around 2 g/hl), resulting in a wine that is as close to its origin as possible while still being stable and precise.

Food & Serving
Les Margas 2019 is a superb partner for richly flavored, subtly spiced cuisine. Think roast poultry with pan juices, pork belly with caramelized onions, veal in cream sauce, or dishes featuring apricot, curry, or Middle Eastern spice profiles. It also works beautifully with aged hard cheeses and washed‑rind varieties, where its texture and soft acidity come into their own. Serve slightly cool, around 10–12°C (50–54°F), to highlight its complexity without muting the aromatics. A brief decant of 20–30 minutes helps the wine open up and allows the initial richness and mineral backbone to harmonize in the glass.
