Mas del Périé “Les Acacias” 2020 is a biodynamic Malbec from the limestone plateaus of Cahors that redefines what this historic appellation can be. Instead of the stereotypically massive, heavily oaked Cahors, Fabien Jouves crafts a wine that highlights Malbec’s purity, freshness and finesse. Certified organic and biodynamic, “Les Acacias” stands out as a modern, terroir‑driven Cahors with deep roots in local tradition but a decidedly contemporary touch.

Tasting Notes
In the glass, Les Acacias 2020 shows an intense, almost inky purple core with vibrant violet rims, hinting at both concentration and youthful energy. The nose is expressive and refined rather than opulent: black cherry, ripe plum and blueberry are lifted by notes of violet, fresh herbs, a touch of graphite and subtle spice. With air, more floral and mineral nuances emerge, giving the wine an elegant, cool-toned profile. On the palate, the wine is surprisingly supple and agile for Cahors. The tannins are fine-grained and silky rather than rustic, framing a core of juicy dark fruit – blackcurrant, blackberry and damson – supported by lively acidity. There’s a distinct stony, chalk-inflected minerality that brings precision and length, with gentle notes of pepper, cocoa and dry flowers on the finish instead of heavy oak. Still youthful but already harmonious, Les Acacias 2020 can be enjoyed now with a brief aeration and will continue to develop additional complexity over the next 5–8 years under good cellaring conditions.

Production
Les Acacias is sourced from high‑lying parcels around Trespoux-Rassiels, on the limestone causses of Cahors, where thin soils over hard rock and a temperate southwestern climate give Malbec both depth and freshness. The vineyards are farmed according to strict biodynamic principles: low yields, no synthetic chemicals, emphasis on soil life and biodiversity. Grapes are harvested by hand at optimal ripeness, carefully sorted, and vinified with a gentle touch to preserve fruit purity. Fermentation typically takes place with indigenous yeasts in concrete or large neutral vessels, with a focus on infusion rather than extraction, followed by élevage in concrete and/or large, used oak so that texture and terroir, not wood, define the final wine.

Food & Serving
Les Acacias 2020 is a versatile food partner, ideal with grilled lamb chops, duck breast, roasted pork, charcuterie and hard or semi-hard cheeses such as Comté or aged Cantal. It also pairs beautifully with mushroom dishes, cassoulet, lentil stews or herb‑roasted root vegetables, where its freshness cuts through richness and its fine tannins complement savory flavors. Serve at 16–18°C (60–64°F) to highlight its aromatic lift and balance; a short decant of 30–45 minutes is recommended in its youth to open up the bouquet and refine the tannins.

Mas del Périé, run by Fabien Jouves in Trespoux-Rassiels, has become one of the leading lights of the Cahors appellation.
