The soils are typically a mix of clay-limestone and sandy components, giving both structure and a certain lightness to the final wine. Grapes are harvested at optimal ripeness, usually by hand to allow careful selection and to preserve the delicate skins of Castelão. In the cellar, fermentation takes place in temperature-controlled vessels to retain bright fruit aromatics, with gentle extraction to avoid overly rustic tannins. The wine is then matured in a combination of tank and, where appropriate, neutral oak, allowing Castelão’s varietal character and the region’s freshness to take center stage without heavy influence from new wood.
