Production
Erste Neue Riesling 2025 comes from Caldaro in Alto Adige, where the vines grow at 500–600 meters above sea level on limestone soils. The cool alpine climate and controlled yields help preserve freshness, aromatic clarity, and a slender, elegant profile in the fruit. The wine is vinified in temperature-controlled stainless steel to keep the varietal character intact, then aged for four months on fine lees to add texture and subtle depth. Malolactic fermentation is deliberately avoided to maintain the wine’s bright acidity and citrus-driven definition. The estate follows FAIR’N GREEN-certified sustainable farming practices throughout the process.

This Riesling is a natural match for shellfish, grilled white fish, sushi, light poultry dishes, and vegetarian plates with asparagus or fresh herbs. It also works beautifully with mildly spicy Asian cuisine, where its acidity and citrus fruit bring balance and lift. Serve well chilled at 8–10°C, and decanting is not necessary.
