Ermita del Conde Pago del Conde 2014 is a characterful Tempranillo from Castilla y León that sits right on the fringe of Ribera del Duero, sharing its prestigious climate and personality. Crafted from old-vine Tempranillo (locally known as Tinta del País), it delivers a concentrated, yet finely poised expression of Spain’s flagship red grape. This cuvée captures the essence of high-altitude Castilian vineyards, where hot days and cool nights shape wines of both power and freshness.

Tasting Notes
In the glass, Pago del Conde 2014 shows a deep, vivid cherry-red core with garnet reflections at the rim, signalling both ripeness and a touch of bottle development. The nose is inviting and layered, with aromas of ripe black cherry, blackberry and plum interwoven with notes of dried fig, sweet spice, tobacco leaf, cedar and a hint of cocoa and roasted coffee. On the palate, the wine is full-bodied and concentrated, yet remarkably balanced. Dark fruit flavours echo the nose, supported by finely-grained tannins and a vibrant line of acidity that reflects the cool night temperatures of the region. Subtle nuances of vanilla, clove, leather and savoury herbs emerge with air, giving the wine both depth and complexity. The finish is long, dry and elegant, with lingering notes of dark berries and spice. Now beautifully open and harmonious, the 2014 vintage is drinking very well, with enough structure to hold for a few more years in a good cellar.

Production
The vineyards for Ermita del Conde Pago del Conde lie in Castilla y León, just outside the official boundaries of DO Ribera del Duero, but at similar altitudes and on comparable soils. Here, Tempranillo vines grow in poor, well-drained limestone and clay-limestone soils that naturally limit yields and concentrate flavour. The continental climate is marked by scorching daytime temperatures that can reach around 40 °C, contrasted by cool nights that drop to about 15 °C; this diurnal shift allows the grapes to ripen fully while retaining acidity and aromatic finesse. The Tempranillo grapes are typically harvested by hand at optimal ripeness to ensure careful selection in the vineyard. In the cellar, fermentation takes place in temperature-controlled tanks to preserve the purity of fruit before the wine is aged—traditionally in oak barrels—to build structure, soften tannins and add subtle notes of spice and toast, resulting in a refined, terroir-driven expression.

Food & Serving
Pago del Conde 2014 is a natural companion to hearty, flavourful dishes. It pairs beautifully with grilled or roasted lamb, Iberico pork, beef ribeye, game birds and slow-braised stews such as ossobuco or Spanish-style rabo de toro. It also works wonderfully with cured meats, semi-cured Manchego, aged hard cheeses and dishes featuring mushrooms, roasted peppers or smoky paprika. Serve at 16–18 °C, allowing the wine to warm gently in the glass. Decanting for 30–60 minutes before serving helps the aromas fully open and softens the tannins, especially if the bottle has been stored in a cool cellar.
