Blending Pinot Noir and Chardonnay from multiple top vintages, it offers depth, precision, and a beautifully dry, gastronomic style. This cuvée captures the essence of Grand Cru Ambonnay—powerful yet finely detailed—made by one of the region’s most quality-obsessed grower-producers.

Tasting Notes
In the glass, this Champagne shows a luminous, pale gold hue with fine, persistent bubbles that form a delicate, creamy mousse. The nose is complex and layered, revealing notes of ripe citrus, Mirabelle plum, white peach, and red apple, interwoven with aromas of toasted brioche, roasted hazelnut, chalky minerality, and subtle hints of dried flowers and spice. On the palate, the wine is precise and energetic, with the structure and red-fruited depth of Pinot Noir beautifully balanced by the tension and finesse of Chardonnay. Expect flavors of lemon zest, blood orange, tart stone fruits, and a touch of raspberry, supported by savory pastry tones and a saline, mineral finish. The Extra Brut dosage keeps it taut and dry, emphasizing purity and length rather than sweetness. While already expressive upon release, this Grand Cru Champagne has excellent aging potential; with 5–10 years in the cellar, it will develop further complexity—richer nutty nuances, honeyed notes, and even more layered autolytic character—without losing its backbone of freshness.

Production
Sourced exclusively from Grand Cru vineyards in Ambonnay, this Champagne is rooted in chalk and limestone soils that provide natural tension, minerality, and aromatic precision. The vines are cultivated with great respect for biodiversity and soil health, often with organic and biodynamic principles guiding the work in the vineyard. Grapes are harvested by hand at optimal ripeness to preserve both concentration and acidity, with strict selection to ensure only the best fruit enters the final blend. In the cellar, individual base wines from several outstanding vintages are vinified separately, often with a significant proportion fermented and aged in small oak barrels to build texture and complexity. Extended lees aging in bottle deepens the wine’s brioche and nutty notes, while the Extra Brut dosage is kept low to allow the full character of Ambonnay’s terroir—and the tension of its chalky soils—to shine through.

Food & Serving
This is a serious, food-friendly Champagne that excels at the table. It pairs beautifully with refined seafood dishes such as seared scallops, lobster, turbot, or oysters with a delicate mignonette, but has enough structure for richer fare like poultry in cream sauce, veal in light jus, roasted guinea fowl, or truffled risotto. Charcuterie, aged Comté, Parmesan, or nutty alpine cheeses also make excellent partners, as do dishes featuring mushrooms or root vegetables. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F), to allow the nose and texture to fully open. A brief, gentle decant in a carafe or serving it in larger white-wine-style glasses can help reveal additional layers of aroma and texture, especially if you’re enjoying it with a meal.
