Tasting Notes
In the glass, the 2021 Gavarini Chiniera shows a luminous, deep garnet core with classic Nebbiolo transparency and a brick-tinged rim that hints at its future evolution. The nose is simultaneously pure and complex, opening with red cherry and wild strawberry, then unfolding into layers of iron, crushed chalk, dried rose petals, mint and subtle spice. There’s a sense of verticality and lift, yet also a darker, more brooding undertone.
On the palate, this is a potent and explosive Barolo that remains impeccably focused. Ripe red cherry and cranberry weave together with notes of blood orange, licorice, dried herbs and a faint ferrous, mineral edge. The tannins are firm, fine-grained and authoritative, wrapping the fruit in a powerful structure without feeling harsh, while the acidity is vibrant and mouthwatering, extending the finish with precision. In magnum, the aging potential is significant: this wine will benefit from at least 5–7 years of cellaring and should continue to develop complexity over 20+ years under proper conditions, gaining truffle, tobacco and more savoury nuances with time.
Production
Gavarini Chiniera is a high, steep, south- to south-east–facing cru in Monforte d’Alba, known for its poor, calcareous and sandy soils rich in limestone and chalk, which naturally limit yields and give Barolo of notable tension and minerality. Elio Grasso farms these vineyards with meticulous, quality-focused practices, typically harvesting Nebbiolo by hand in small crates to ensure careful selection of perfectly ripe, healthy bunches. In the cellar, the grapes are gently crushed and undergo a traditional, long maceration on the skins to extract aroma, color and fine tannins. Fermentation takes place in temperature-controlled vessels, followed by extended aging in large Slavonian oak casks, allowing the wine to evolve slowly and harmoniously while preserving the purity of fruit and the distinct character of the Gavarini Chiniera terroir. The magnum format further enhances this slow, graceful evolution.
Food & Serving
This Barolo calls for equally characterful dishes: think braised beef or veal (osso buco, brasato al Barolo), lamb shanks, rich game such as venison, or truffle-infused dishes typical of the Langhe. It is also superb with aged hard cheeses like Parmigiano Reggiano, mature Pecorino or alpine cheeses, and earthy mushroom preparations. For optimal enjoyment, serve at 16–18°C (60–64°F). In its youth, especially in this structured 2021 vintage and magnum format, decanting for 2–3 hours is highly recommended to soften the tannins and allow the aromatics to fully unfurl; older bottles will require a gentler, shorter decant primarily to remove sediment.
