Tasting Notes
In the glass, the 2020 Gavarini Chiniera shows a luminous garnet core with brick-tinged edges typical of Nebbiolo, already hinting at its aromatic complexity. The nose leads with vivid notes of strawberry tart and red cherry compote, reminding of ripe summer fruit, followed by darker accents of tar, crushed rock and earthy undertones. There is less overt floral character than in cooler years, allowing the interplay of fruit and earth to take center stage, with a gentle backdrop of sweet baking spice and subtle licorice. On the palate, the wine is focused and precise, combining the warmth of the vintage with the tension of this elevated, chalk-rich site. Juicy red berries, sour cherry and strawberry preserve are layered over a core of graphite, tar, and savory earth. Fine, firm Nebbiolo tannins are very present yet well-polished, supported by vibrant acidity that keeps the wine lifted and long. The finish is smooth, persistent and mouthwatering, with lingering notes of spice and red fruit. While already appealing with some air, this Barolo has the structure to evolve beautifully over 12–20 years, gaining complexity, tertiary nuances and silken texture with proper cellaring.

Production
Gavarini Chiniera is a steep, south-facing single vineyard in Monforte d’Alba, planted entirely to Nebbiolo on poor, calcareous marl and sandy soils at relatively high altitude. This combination of exposure, elevation and mineral-rich terroir produces grapes with both ripeness and remarkable freshness, even in warmer years. The fruit is harvested by hand, with rigorous selection in the vineyard and at the winery to ensure only perfectly healthy clusters are used. Vinification follows a classically inspired approach: extended maceration on the skins to extract fine tannins and aromatic depth, followed by long aging in large, neutral Slavonian oak botti. This gentle, non-intrusive élevage allows the character of the site and the vintage to shine without heavy oak imprint, resulting in a Barolo of clarity, energy and finesse.

Food & Serving
This Barolo is a natural partner for refined yet flavorful dishes such as truffle risotto, tajarin pasta with ragù, braised beef or veal shank, game birds, and aged hard cheeses like Parmigiano Reggiano or mature Pecorino. Its combination of acidity, tannin and savory depth also works beautifully with mushroom-based dishes and roasted root vegetables. Serve at 16–18°C (60–64°F) in large Burgundy or Nebbiolo stems to allow the aromatics to unfold. Decanting for 1–2 hours in its youth is recommended to soften the tannins and open the bouquet; older bottles may need a gentler, shorter decant primarily to separate sediment.
