Elio Grasso Barolo Gavarini Chiniera 2021 is a benchmark single-vineyard Barolo from the steep slopes of Monforte d’Alba, crafted entirely from Nebbiolo. This cuvée is prized for its combination of precision, fragrance and age-worthy structure, capturing the tension and elegance of a great Barolo in its youth. Sourced from the famed Gavarini Chiniera cru, it marries traditional winemaking with a keen eye for detail in the vineyard.

Tasting Notes
In the glass, the 2021 Gavarini Chiniera shows a luminous garnet hue with the classic Barolo transparency at the core and a delicate brick tinge at the rim, hinting at the grape’s naturally pale color and high tannin. The nose opens with pure, high-toned aromatics: rose petals, violet, red cherry and wild strawberry, layered with blood orange zest, anise, and subtle notes of tar, cedar and sweet spices. With air, hints of dried herbs, licorice and a gentle mineral dustiness begin to emerge. On the palate, this Barolo is focused and vertical, driven by finely etched Nebbiolo tannins and vibrant acidity. Flavors of red cherry, cranberry and raspberry are intertwined with savory notes of tea leaf, tobacco, and a saline, chalky minerality derived from the hillside soils. The structure is firm yet refined, with a long, persistent finish that leaves impressions of rose, citrus peel and spice. While already showing impressive balance, the 2021 has significant aging potential; it will gain complexity and soften in texture over 12–20 years, rewarding patience in the cellar.

Production
The Gavarini Chiniera vineyard sits on steep, south- to southeast-facing slopes in Monforte d’Alba at relatively high altitude, on poor, calcareous sandstone soils that naturally limit yields and enhance aromatic finesse. The Nebbiolo is hand-harvested parcel by parcel to ensure optimal ripeness, with meticulous sorting both in the vineyard and at the cellar door. Fermentation typically takes place in temperature-controlled stainless steel with an extended maceration on the skins to extract fine tannins and complexity, followed by long aging in large Slavonian oak botti, which respect the purity of fruit and the character of the cru rather than imposing overt oak flavors.

Food & Serving
This is a natural partner for rich Piedmontese and hearty autumnal dishes: think tajarin with white truffle, braised veal or beef (brasato al Barolo), game birds, wild mushroom risottos and aged hard cheeses such as Parmigiano Reggiano or mature pecorino. Serve at 16–18°C to highlight the wine’s aromatics and freshness. In its youth, decanting for 2–3 hours is recommended to allow the tannins to relax and the bouquet to fully unfurl; older bottles can be decanted more gently, mainly to remove any sediment.

Elio Grasso is one of the reference-point producers in Monforte d’Alba, a family-run estate that rose to prominence from the late 1970s by focusing exclusively on estate-grown fruit and classic expressions of Barolo. Working with some of the appellation’s most coveted crus, including Gavarini Chiniera, the Grasso family has been instrumental in showcasing the importance of site-specific bottlings in Barolo. Their approach marries traditional long aging in large casks with precise vineyard work and low yields, resulting in wines that are both authentic to the region and consistently acclaimed by critics and collectors worldwide.
