Tasting Notes
In the glass, the wine pours a deep dark violet-purple, hinting at both concentration and freshness. The nose is layered and refined, with aromas of blackcurrant, plum, violet, bay leaf, and delicate spice, all lifted by a clear stony minerality that gives the wine real energy and definition. On the palate, it is medium to full-bodied with silky, well-integrated tannins, vibrant acidity, and a long, polished finish. Rather than being heavy or overly powerful, it has a poised, almost Burgundian feel, with tension and persistence that make it immediately engaging now while also giving it excellent aging potential over many years.

Production
The fruit comes from a minute 1.7-hectare site in El Cepillo, in the southern Uco Valley at around 1,300 meters above sea level. This cool, high-altitude terroir—with gravelly, limestone-rich, glacier-formed soils—brings freshness, structure, and a distinctive rocky character to the wine. The vineyards benefit from strong diurnal shifts, allowing for full aromatic ripeness while preserving bright acidity. The wine is vinified with whole-cluster Malbec, together with a small percentage of Sémillon, and then aged for an extraordinary 60 months in 2,000-liter foudres. This long maturation builds complexity and texture while keeping oak influence subtle and supporting the wine’s pure, precise fruit profile.

Food & Serving
This is a versatile wine for refined food pairings such as grilled lamb, beef tenderloin, duck, mushroom dishes, or aged hard cheeses. Serve it at around 16–18°C, and consider decanting for 1–2 hours to fully open its aromatics and soften the structure. With proper cellaring, it can continue to evolve beautifully for many years.
