Tasting Notes
In the glass, the 2023 Wiltinger Braune Kupp Kabinett is pale lemon with green highlights, signalling youth and vibrancy. The nose is delicately expressive, with notes reminiscent of tart yet ripe apple flesh, lemon zest, crushed wet stone and a light herbal lift that recalls fresh green yarrow, along with a faint, elegant smokiness.
On the palate, the wine is wonderfully fine-boned, sleek and juicily refreshing. Bright, ripe citrus and green-red orchard fruits are wrapped in a mouth-watering acidity that frames the discreet residual sweetness. Hints of Mirabelle and white stone fruit add nuance without making the wine feel overtly sweet, leaving the finish just on the drier side of off‑dry, long and shimmering with salty, slatey minerality. Enjoyable now for its energy and purity, it has the structure and balance to develop beautifully over 10–15 years, gaining complexity and honeyed, smoky nuances with time in bottle.
Production
Wiltinger Braune Kupp is a steep, south- to southwest-facing site on the Saar, a cooler tributary of the Mosel, famed for its fine, linear Rieslings. The soil is dominated by weathered slate, which stores warmth and imparts that distinctive salty, smoky minerality. Riesling vines here are typically worked by hand due to the extreme slopes, with careful selection of perfectly ripe but not overripe grapes to preserve Kabinett lightness and tension. After a gentle pressing, the must is fermented—often with ambient yeasts—in traditional large old oak casks (Fuder) or stainless steel, at cool temperatures, to capture aromatics and finesse. Fermentation is stopped at a naturally balanced point, leaving a touch of residual sugar that is harmonised by the vivid Saar acidity, and the wine rests on its fine lees before bottling to enhance texture and complexity.
Food & Serving
This Kabinett is a versatile food companion, pairing beautifully with delicately spiced Asian dishes, sushi and sashimi, ceviche, fresh goat’s cheese, lightly smoked fish, and vibrant salads with citrus or apple elements. It also shines alongside German classics like trout with almonds or simple roast chicken with herbs. Serve well-chilled at around 8–10°C; a brief 15–20 minutes in the fridge before opening is ideal if it’s already cool. Decanting is not essential, but pouring the wine into larger glasses and giving it a few minutes in the glass will help the aromatics unfurl.
