Tasting Notes
In the glass, the 2015 Grand Cru Extra Brut shows a deep, luminous golden hue with a fine, persistent bead that speaks to its extended lees aging. The nose is intense and layered: ripe orchard fruits (baked apple, pear), yellow plum and Mirabelle are wrapped in notes of toasted brioche, hazelnut, lemon curd and candied citrus peel, with underlying hints of chalk, smoke and a touch of spice.
On the palate, this is concentrated and structured, driven by Pinot Noir’s power and texture, lifted by Chardonnay’s precision and freshness. Expect a broad, vinous entry with flavors of ripe stone fruit, citrus zest, nougat and roasted nuts, followed by saline, chalky minerality and a long, dry, mouthwatering finish. The Extra Brut dosage keeps everything taut and focused, highlighting the wine’s natural richness rather than masking it. This 2015 has the substance and structure to evolve beautifully for another 8–15 years in a good cellar, gaining even more complexity, creaminess and tertiary notes over time.
Production
Egly-Ouriet’s Grand Cru parcels lie primarily in Ambonnay, Bouzy and Verzenay, some of the most revered chalk-rich slopes in Champagne, with old vines rooted deep into pure limestone and clay. The 2015 Millésime is typically dominated by Pinot Noir, complemented by Chardonnay, all sourced from Grand Cru vineyards and harvested by hand at optimal ripeness to ensure concentration and natural balance. In keeping with the estate’s philosophy, fermentation takes place largely in oak barrels, with extended lees contact to build texture and complexity, and minimal intervention throughout. The wine spends many years aging on its lees in bottle—far beyond the regional minimum—before disgorgement and a very low Extra Brut dosage, allowing the character of the terroir and the vintage to stand front and center.
Food & Serving
This is a serious, gastronomic Champagne that shines at the table. It pairs beautifully with roasted poultry, guinea fowl, veal, lobster, scallops, rich fish dishes (such as turbot or monkfish), mushroom-based dishes and refined poultry or game bird with cream or truffle sauces. It also works well with aged Comté, Parmesan and other hard alpine cheeses. Serve cool but not too cold, ideally around 10–12°C (50–54°F), to allow the aromatics and texture to fully open. Decanting for 30 minutes in a wide-bottomed carafe can be beneficial for a young bottle, especially if you are serving it with a main course, as it helps the wine reveal its full range of flavors and its finely woven structure.
