Egly-Ouriet Champagne 1er Cru Vignes de Bisseuil Extra Brut is a finely etched grower Champagne that showcases the pure, chalky elegance of the premier cru village of Bisseuil. Tasting Notes
In the glass, Vignes de Bisseuil pours a pale, luminous straw-gold with a fine, persistent bead that forms a delicate, creamy mousse. The nose is refined and focused, opening with lemon zest, crisp green apple and white flowers, followed by notes of chalk, fresh baguette, almond and a hint of stone fruit and hazelnut as it warms in the glass.
On the palate, this Extra Brut is precise and tightly knit, driven by Chardonnay’s vibrant acidity and minerality, supported by the subtle depth of Pinot Noir and Pinot Meunier. Expect a tension between citrus (grapefruit, lemon curd) and orchard fruit, layered with brioche, crushed stones, and a touch of salinity. The finish is long, dry and mouthwatering, with a lingering chalky grip and fine, elegant bitterness. While already compelling on release, it has the structure and acidity to age gracefully for 5–10 years in a good cellar, gaining complexity, creaminess and nutty, honeyed nuances over time.
Production
Vignes de Bisseuil is drawn from premier cru vineyards in the village of Bisseuil, in the eastern part of the Montagne de Reims, where steep slopes and deep chalk soils give naturally tense, mineral-driven wines. Egly-Ouriet farms these plots with great care, favoring low yields and meticulous hand-harvesting to ensure only perfectly ripe, healthy grapes reach the press. In the cellar, the base wines are traditionally vinified, often with fermentations in oak and extended lees contact to build texture and complexity, followed by a notably long aging period on the lees in bottle before disgorgement. The Extra Brut dosage is kept very low, allowing the character of Chardonnay, Pinot Noir and Pinot Meunier – and the chalk-rich terroir – to shine through with clarity and precision.
Food & Serving
This Champagne is superb at the table, where its tension and depth come into their own. Pair it with oysters, caviar, sashimi, or simply prepared white fish to highlight its saline, mineral edge; it also complements scallops, lobster, beurre blanc dishes, roast chicken, and creamy risottos with finesse. Serve well chilled, ideally around 8–10°C (46–50°F), in a white wine or tulip-shaped glass to let the aromatics unfold. A brief 10–15 minutes in the glass, or a short, gentle decant in a chilled carafe for more mature bottles, can help the wine fully express its layers.
