Tasting Notes
In the glass, Affuté A/1 shows a luminous pale straw to light gold hue, animated by a fine, persistent bead and a delicate mousse. The nose opens with crisp green apple, lemon zest and white flowers, layered with chalky minerality, toasted brioche and a hint of roasted hazelnut – a classic interplay of Pinot Noir depth and Chardonnay tension. In the cellar, the must is fermented in temperature-controlled vessels to retain freshness and precision, with a careful balance between fruit expression and structure. Extended aging on the lees in bottle builds texture, fine bubbles and subtle autolytic notes, while the Extra Brut dosage is kept very low to let the terroir, rather than sweetness, define the final style.
