Tasting Notes
In the glass, the 2018 Jentoft Ryan Pinot Noir shows a luminous, medium ruby hue with subtle garnet reflections at the rim. The nose is wonderfully expressive and layered, weaving together notes of blackberries and wild raspberries with hints of prosciutto, dried herbs, forest floor, and a touch of warm, charred earth.
On the palate, it is medium-bodied but concentrated, with an energetic core of succulent dark berries and red cherry framed by a fine, almost powdery tannin structure. Savory undertones of wet leaves, spice, and dried herbs add complexity, while a bright, well-integrated acidity keeps everything focused and lifted. The finish is long, layered and persistent, with a gentle bitterness from the skins and stems that adds tension and sophistication. While already compelling, this wine has the structure and balance to evolve gracefully over the next 8–12 years, gaining further nuance and tertiary complexity.
Production
The Jentoft Ryan Vineyard benefits from a cool, coastal-influenced terroir, where foggy mornings, afternoon breezes and well-drained soils help Pinot Noir ripen slowly and evenly, preserving natural acidity and aromatic detail. Grapes are typically hand-harvested at night or in the early morning to keep clusters cool, then sorted carefully to ensure only pristine fruit makes it into the fermenters. DuMOL favors gentle handling: fruit is often destemmed with a portion of whole clusters retained, followed by native or carefully selected yeast fermentation in small open-top tanks with manual punch-downs. After fermentation, the wine is pressed off to French oak barrels—often with a thoughtfully judged proportion of new oak—for a lengthy period of élevage, allowing tannins to knit together and the wine to develop its silken texture and layered complexity before bottling without excessive fining or filtration.
Food & Serving
This Pinot Noir’s balance of fruit, savoriness and acidity makes it an exceptionally versatile food wine. It pairs beautifully with roasted duck breast, herb-crusted pork loin, mushroom risotto, grilled salmon, or dishes featuring root vegetables and wild herbs. Earthy cheeses such as aged Comté or a mild washed-rind cheese can also be excellent companions. Serve at 14–16°C (57–61°F) to highlight its aromatic detail and freshness; if the wine is just opened and youthful, a gentle decant of 30–45 minutes can help it unfurl its full aromatic complexity.
