Dugat-Py’s Gevrey-Chambertin Lavaux St. Jacques 2005 comes from one of the most respected Premier Cru vineyards in Gevrey-Chambertin, crafted from very old Pinot Noir vines on steep, stony limestone slopes. This is a wine built on precision and power, with Dugat-Py’s famously low-yielding, meticulous approach giving it impressive depth and a distinctly cool mineral edge.

Tasting Notes
Now beautifully mature, the 2005 vintage shows a refined balance of strength and finesse. In the glass, it carries a deep garnet core with evolved ruby hues at the rim, while the bouquet has moved beyond dark cherry and blackberry into layers of truffle, leather, forest floor, and subtle sweet spice from the oak. The palate is concentrated yet supple, with silky tannins, fresh acidity, and a long, resonant finish marked by minerality and earthy complexity. This is a wine with excellent aging pedigree, and although it is already in a very expressive stage, it should continue to hold well for further cellaring for those who enjoy tertiary Burgundy character.

Production
Lavaux St. Jacques is one of the standout Premier Cru sites in Gevrey-Chambertin, known for its steep exposure and limestone-rich soils that naturally encourage concentration and tension in the wine. Dugat-Py farms very old vines here by hand, with extremely low yields to ensure maximum quality and intensity. After harvest, the grapes undergo fermentation in small open vats with a long maceration to extract color, structure, and complexity. The wine is then aged for around 18 months in new oak barrels, adding polish and depth while preserving the vineyard’s cool, mineral signature.

Food & Serving
This wine pairs beautifully with refined dishes such as roast duck, beef tenderloin, venison, braised lamb, or mushroom-based recipes with truffle or game-like depth. It also works wonderfully with aged cheeses, especially those with earthy or nutty character. Serve at around 16–18°C, and consider decanting for 30–60 minutes if opening now to allow the aromatics and texture to fully unfold.
