Tasting Notes
In the glass, this is a serious, dark-fruited Burgundy with a polished, mature appearance that hints at its age and structure. After more than a decade in bottle, the wine has evolved from dense black fruit toward a more layered aromatic profile of forest floor, truffle, and a delicate smoky note. On the palate, the wine shows impressive depth and tension, with ripe but finely tuned tannins, vibrant acidity, and a mineral undertone that keeps everything focused. The finish is long and persistent, with a refined, earthy complexity and enough structure to suggest further positive development over time, though it is already drinking beautifully now.

Production
Cœur de Roy is a blend from multiple parcels around Gevrey-Chambertin planted on classic clay and limestone soils, with vines that are exceptionally old and produce very low yields. The winemaking is intentionally restrained, featuring cold maceration, a long fermentation in small open vats, and around 18 months of aging, mostly in new oak barrels, to build intensity without losing definition.

This wine pairs beautifully with dishes that echo its depth and earthy complexity, such as roast duck, braised beef, game birds, wild mushrooms, or truffle-infused cuisine. Serve at around 16–18°C, and consider decanting for about 30–60 minutes if opening now, especially to let the mature aromas and structure fully unfold.
