Dr. Hermann Kinheimer Hubertuslay Eiswein Goldkapsel 2023 is a rare, intensely concentrated dessert wine from the steep slate vineyards of the Mosel-Saar-Ruwer. Crafted from Grüner Veltliner and Weisser Riesling harvested and pressed while frozen on the vine, it delivers the hallmark purity, tension, and sweetness that Eiswein lovers seek. The “Goldkapsel” designation signals an especially rich and select bottling, made only in top years and in very limited quantities.

Tasting Notes
In the glass, this Eiswein shows a luminous, bright gold color with glints of green, reflecting both its youth and its vibrant acidity. The nose is pure and lifted, offering aromas of candied lemon peel, green apple, white peach, and ripe pear, layered with notes of acacia blossom, honeycomb, and a delicate slate minerality characteristic of Mosel vineyards. On the palate, expect an intense yet finely etched sweetness, with flavors of juicy stone fruit, preserved citrus, and orchard fruits wrapped around a spine of razor-sharp acidity. Hints of lime zest, herbal spice from the Grüner Veltliner component, and wet stone add complexity and precision to the long, mouthwatering finish. Despite its richness, the wine remains remarkably light on its feet. With proper cellaring, this 2023 Eiswein has excellent aging potential—20 years or more—during which it will develop deeper honeyed, nutty and dried-fruit nuances while retaining its vibrant core.

Production
Kinheimer Hubertuslay is a classic Mosel steep-slope vineyard, with south to southwest exposure and weathered slate soils that store heat by day and release it at night, promoting slow, even ripening. The cool Mosel climate is ideal for preserving high acidity, essential for great Eiswein. For this Goldkapsel bottling, grapes of Grüner Veltliner and Weisser Riesling are left on the vine long into winter and hand-harvested in the early hours when temperatures drop well below freezing, concentrating sugars and aromas in the frozen berries. The grapes are pressed while still frozen, yielding only a tiny amount of intensely sweet must, which is then slowly fermented at low temperatures to maintain purity and aromatic detail. The wine is gently clarified and matured in stainless steel (and/or neutral large barrels) to preserve freshness, with minimal intervention to let the vineyard character shine.

Food & Serving
This Eiswein is a standout partner for classic desserts such as lemon tart, fruit tarts, apple strudel, and panna cotta, as well as blue cheeses like Roquefort or Stilton, where the sweetness beautifully balances salt and intensity. It also works wonderfully on its own as a luxurious digestif or with simple pairings like fresh stone fruits or a plate of hard, aged cheeses. Serve well chilled at around 6–8°C (43–46°F) to highlight its freshness and aromatic lift. Decanting is generally not necessary; however, opening the bottle 10–15 minutes before serving allows the aromas to fully unfold in the glass.
