Doyard Champagne Révolution Blanc de Blancs Grand Cru Non Dosé is a razor-sharp, mineral-driven expression of Chardonnay from some of Champagne’s most prized Grand Cru villages. Crafted without dosage, it showcases the grape and terroir in their purest form—precise, tense and profoundly elegant. This cuvée reflects Doyard’s long-standing philosophy of low intervention and meticulous craftsmanship, while paying homage to the classic grower-Champagne tradition in the Côte des Blancs.

Tasting Notes
In the glass, Révolution Blanc de Blancs shows a pale, luminous straw color with green glints and a fine, persistent bead of bubbles. The nose opens with lifted aromas of lemon zest, green apple and white flowers, layered with chalky minerality, fresh brioche, crushed oyster shell and a subtle hint of hazelnut and flint. On the palate, this Non Dosé Champagne is intensely dry, linear and focused, with a racy acidity that frames its crystalline citrus and orchard fruit core. Notes of yuzu, grapefruit pith and Granny Smith apple are intertwined with saline, chalky nuances and a touch of almond and pastry from extended lees aging. The finish is long, gripping and mouthwatering, leaving a lingering impression of stone, citrus peel and sea spray. Already beautifully expressive on release, it has the structure and tension to evolve gracefully for 5–10 years, gaining more complexity, creaminess and nutty depth with time in the cellar.

Production
Révolution Blanc de Blancs is sourced exclusively from Chardonnay grown in Grand Cru villages of the Côte des Blancs, such as Avize, Cramant, Oger and Le Mesnil-sur-Oger, where chalk-rich soils and cool slopes yield wines of remarkable precision and minerality. Doyard farms these vineyards using careful, quality-focused practices, with manual harvesting to ensure only perfectly ripe, healthy grapes reach the press. Fermentation typically takes place in a mix of stainless steel and oak, with a strong emphasis on preserving tension while building texture through lees contact. The wine spends extended time on its lees in bottle, developing finesse and autolytic complexity, before being disgorged without dosage (Non Dosé), allowing the natural balance of fruit, acidity and terroir to shine without added sweetness.

Food & Serving
This bone-dry, chiselled Champagne is a natural partner for pristine seafood: oysters, scallop crudo, sea urchin, sashimi, steamed shellfish and simply grilled white fish all highlight its saline, chalky edge. It also pairs beautifully with caviar, sushi, tempura, goat cheese, fresh cheeses, light citrus-dressed salads and delicate vegetable dishes. Serve well-chilled at around 8–10°C (46–50°F) in a white wine glass or large tulip to let the aromas fully unfold. A brief 10–15 minutes in the glass, or a short decant into a chilled carafe for very young bottles, can help the wine open up and soften its initial tension, revealing more depth and creaminess on the palate.
